Eugenio Collavini Il Grigio Spumante Brut is een stijlvolle mousserende wijn uit Friuli, gemaakt volgens de Martinotti-methode met een opvallend lange rijping op de lie. Deze wijn wordt al sinds 1973 geproduceerd en geldt als een klassieker binnen het assortiment van Collavini. Il Grigio staat bekend om zijn finesse en subtiele aromatische karakter, perfect als elegant aperitief.

Wijngaarden en regio

De druiven komen uit zowel de heuvels als de vlaktes van Friuli, een gebied dat bekend staat om zijn frisse witte wijnen en delicate mousserende stijlen. Dankzij het gematigde klimaat en de bodems van mergel en kalksteen ontwikkelen de druiven hier een natuurlijke zuurgraad en aromatische zuiverheid. De wijnstokken staan aangeplant volgens het Guyot- en spurred cordon-systeem, met een dichtheid van 4400 tot 4800 stokken per hectare.

Vinificatie en rijping

Na een zachte persing vindt de fermentatie plaats zonder schilcontact. In het voorjaar volgt een tweede gisting op 14 °C in verticale druktanks, waarna de wijn vijf tot zes maanden op de fijne gistresten blijft rijpen. Deze verlengde autolyse zorgt voor extra structuur, elegantie en een fijne mousse, kenmerkend voor kwaliteitsvolle Spumante volgens de Martinotti-methode.

Il Grigio heeft een bleke, heldere kleur met groene reflecties en een fijne, aanhoudende mousse. In de neus vind je aroma’s van Golden Delicious-appels, peer en versgebakken brood. De smaak is rond, subtiel aromatisch en wordt afgerond door een hint van citrus en een opvallend lange afdronk. Serveer op 8 graden bij visgerechten, charcuterie, groentesoep of ovengebakken vis.
